Flank Steak Salad
What you need:
-1 head of living butter lettuce (You really can use whatever type of lettuce you would like, I just prefer butter lettuce!)
-hand-full of cherry tomatoes
-1/4 C. Feta cheese
-1 Cucumber (Sliced and cut into 1/4th)
-Shredded carrots
-Greek black pitted olives (Sliced in half, long-ways)
-1/4 Red onion (chopped)
-Sliced Flank steak (you can choose how much)
Balsamic Dressing:
-1 1/2 Tbsp. Honey
-1 Garlic Clove (Chopped)
-1/3 C. Balsamic Vinegar
-1/3 C. Olive Oil
-Salt & Pepper to taste
What to do:
1. Through together your salad veggie's and feta cheese as you would normally do!
2. Whisk together the ingredients for the salad dressing.
3. Add the sliced pieces of the flank steak to the top of the salad and pour desired amount of dressing.
4. Enjoy!
Recipe Notes:
-This dressing is one of my favorites and I keep it my fridge all the time. I actually prefer to make it in a mason jar and instead of whisking together I will just shake it up and then store it in the fridge!
-For this salad, I will get my flank steak at my local health-food store (Lucky's Market), they have some already cooked flank steak in the deli area and it's always cooked PERFECTLY. This makes for an easy week night meal and there's always left overs for lunch!
